With so much fresh corn this summer, I was yearning for something different and refreshing to create with the corn. I created this salad as a refreshing fresh, spicy treat using that sweet delicious summer corn.

Ingredients
- 8 - cobs of fresh corn shucked
- 2 - lemons, juiced
- 2 teaspoons salt
- 3 tablespoons sugar
- 1 teaspoon pepper
- 1 tablespoon rice wine vinegar
- 1/3 cup olive oil
- 1 pint cherry tomatoes (or a can of diced with juice)
- 2 - jalapenos, diced
- 1 - vidalia onion, diced
- 1/2 teaspoon basil, chopped
- 1/2 teaspoon cayenne pepper
- 1 tablespoon horseradish, prepared
- 2 tablespoons garlic, minced
How To Make spicy fresh corn and tomato salad

Step 1Cut corn from the cob, place in a bowl.

Step 2Add chopped onion and tomato to bowl with corn.

Step 3Combine all other ingredients in a separate bowl, whisk together.

Step 4Refrigerate for 3 to 4 hours
