With so much fresh corn this summer, I was yearning for something different and refreshing to create with the corn. I created this salad as a refreshing fresh, spicy treat using that sweet delicious summer corn.

Ingredients

  • 8 - cobs of fresh corn shucked
  • 2 - lemons, juiced
  • 2 teaspoons salt
  • 3 tablespoons sugar
  • 1 teaspoon pepper
  • 1 tablespoon rice wine vinegar
  • 1/3 cup olive oil
  • 1 pint cherry tomatoes (or a can of diced with juice)
  • 2 - jalapenos, diced
  • 1 - vidalia onion, diced
  • 1/2 teaspoon basil, chopped
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon horseradish, prepared
  • 2 tablespoons garlic, minced

How To Make spicy fresh corn and tomato salad

  • Step 1
    Cut corn from the cob, place in a bowl.
  • Step 2
    Add chopped onion and tomato to bowl with corn.
  • Step 3
    Combine all other ingredients in a separate bowl, whisk together.
  • Step 4
    Refrigerate for 3 to 4 hours
