This is an easy/peasy recipe to assemble, and since no cooking is required, you can have it on the table in 10 quick minutes. This is an excellent salad to serve with fish; however, it works well with beef, and chicken. As a matter of fact, you could make it a bit bigger, and serve it as a complete meal. So, you ready… Let’s get into the kitchen.

Ingredients For side essentials: artichoke w/optional crab, salad

  • PLAN/PURCHASE
  • butter lettuce, or other lettuce, as needed
  • 6 oz
    artichoke hearts, more on this later
  • olive oil, extra virgin, as needed
  • balsamic vinegar, or glaze, as needed
  • shaved parmesan, as needed
  • black pepper, freshly ground, to taste
  • OPTIONAL ITEMS
  • 4 oz
    lump crab meat, picked over for shells

    There are many varieties of artichokes out there; some come in cans, and some come in glass jars. What you want are marinated artichokes. The marinade usually consists of oil, vinegar, citrus, and a few other assorted spices. Marinated artichokes almost always come in a glass jar… at least the good ones do. My favorite brand is Cento Artichoke Hearts, Quartered and Marinated, 6 oz jar.

    Gather your ingredients (mise en place).

    Layer two plates with butter lettuce, or lettuce of choice.

    Drain the artichokes, and divide between the two plates, then add the lump crab meat, if using.

    Add a drizzle of extra virgin olive oil.

    Add a bit of balsamic vinegar, or glaze.

    Chef’s Note: If you have a balsamic glaze, use it in place of the straight vinegar. Being thicker, it clings to the ingredients; giving a better presentation.

    Toss on some parmesan shavings, and add a few grinds of fresh black pepper.
