I wanted shrimp salad for lunch when my husband reminded me I had some Mini fusilli pasta left in the frig from dinner the other night and I had several left over chopped veggies in the frig also, this is what I came up with, I kep it low fat but you could use the full fat version of the same ingredients.

Ingredients

  • 3 c
    cooked salad shrimp
  • 3 c
    cooked mini fusilli pasta
  • 1/2 c
    sliced olives
  • 1/4 c
    chopped red onion
  • 1/2 c
    diced celery
  • 1/4 c
    diced red pepper
  • 1/2 c
    chopped brocolli flowerets
  • 1/2 c
    shredded cheese, your choice
  • 1/2 tsp
    seafood seasoning
  • 1 tsp
    bacon salt
  • pinch
    ground celery seed
  • pinch
    course ground black pepper
  • 1/4 c
    zesty fat free italian dressing
  • 3/4 c
    fat free mayo

  1. Mix all ingredients and serve over a bed of lettuce.
