Cool, refreshing, crunchy, creamy, nutty and healthy. This revision of a classic Waldorf salad has it all. Makes an excellent side or lite snack or lunch.

Ingredients

  • 1/2 cup toasted and chopped pecans
  • 5.3 ounces plain greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 cup fresh red seedless grapes halfed
  • 1 cup crisp sweet apple chopped
  • 1/4 cup celery thinly sliced and chopped
  • 1 cup quinoa, cooked & cooled

How To Make quinoa waldorf salad

  • Step 1
    Toast pecans for 5-8 min at 350 (note: when you get a slight smell of nuttiness they are ready) then chop
  • Step 2
    In a medium bowl mix yougert, lemon juice, honey, grapes, apple, and celery
  • Step 3
    Incorporate with cooked quiona. Chill for at least an hour, ENJOY!!!
