Ingredients
- 1 cup quinoa
- 2 cups water
- 1 large sweet potato
- 4 tablespoons fresh orange juice
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large oranges, divided into wedges
- 2 cups spinach, fresh
- 1/2 cup walnuts, chopped
How To Make orange sweet potato and quinoa salad

Step 1Bring water to a boil. Add quinoa and reduce heat to a simmer and cover. Cook until quinoa is tender and all water is absorbed (about 15 minutes). Remove from heat and cool.

Step 2Place sweet potato in a microwaveable dish and pierce multiple times with a knife. Microwave on high until soft (about 10 minutes). Peel and cut into roughly 3 inch chunks.

Step 3In a large bowl whisk together orange juice, lemon juice, oil, salt and pepper. Add quinoa, sweet potato, orange wedges and spinach. Toss to combine. Top with walnuts.
