How to Make Orange Sweet Potato and Quinoa Salad

  1. Bring water to a boil. Add quinoa and reduce heat to a simmer and cover. Cook until quinoa is tender and all water is absorbed (about 15 minutes). Remove from heat and cool.
  2. Place sweet potato in a microwaveable dish and pierce multiple times with a knife. Microwave on high until soft (about 10 minutes). Peel and cut into roughly 3 inch chunks.
  3. In a large bowl whisk together orange juice, lemon juice, oil, salt and pepper. Add quinoa, sweet potato, orange wedges and spinach. Toss to combine. Top with walnuts.
