Sweet potatoes don't have to be relegated to the Thanksgiving table! The spinach and quinoa and orange juice elevate the potatoes to have a light, clean flavor. You have sweet, savory, crunchy- all in one bite!

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 large sweet potato
  • 4 tablespoons fresh orange juice
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large oranges, divided into wedges
  • 2 cups spinach, fresh
  • 1/2 cup walnuts, chopped

How To Make orange sweet potato and quinoa salad

  • Step 1
    Bring water to a boil. Add quinoa and reduce heat to a simmer and cover. Cook until quinoa is tender and all water is absorbed (about 15 minutes). Remove from heat and cool.
  • Step 2
    Place sweet potato in a microwaveable dish and pierce multiple times with a knife. Microwave on high until soft (about 10 minutes). Peel and cut into roughly 3 inch chunks.
  • Step 3
    In a large bowl whisk together orange juice, lemon juice, oil, salt and pepper. Add quinoa, sweet potato, orange wedges and spinach. Toss to combine. Top with walnuts.
