Just made this up based on all the things I love. They work well together -- I think. Certainly not low fat - but all the right kinds of fats. Tastes really good too!

Ingredients

  • 2 medium avocados diced
  • 1/2 medium red onion diced
  • 1/4 cup kalamata (greek) olives diced
  • 1/4 cup green olives diced
  • 1 large tomato diced
  • 1/4 cup italian parsley finely chopped
  • 1 tablespoon lemon juice
  • 6-8 ounces feta cheese crumbled
  • 1 package romaine lettuce chopped
  • - sun dried tomato dressing - to taste
  • - salt and pepper

How To Make mediterranean salad

  • Step 1
    Dice avocado, salt and pepper to taste, then coat in lemon juice -- add to bowl
  • Step 2
    dice tomatoes, salt and pepper to taste, then add to bowl
  • Step 3
    chop remaining ingredients and add to bowl
  • Step 4
    add in sun-dried tomato dressing (could use balsamic dressing) and toss
  • Step 5
    serve immediately
