This heirloom tomato salad is best made with smaller "cherry" size tomatoes, if you can find them. If not, using the larger size will work as well. You can also substitute for non-heirloom tomatoes. This recipe makes a great side dish for fish, chicken, steak or hamburger. You can also chop the ingredients finer to make a topping as well, or mix with chopped lettuce for a flavorful chopped salad.

Ingredients

  • 5 large assorted heirloom tomatoes (or several small heirloom tomatoes)
  • 1/4 cup red onion, thinly sliced
  • 1 cup english cucumber, seeded, cut into small chunks
  • 1/4 cup fresh basil, chopped
  • 1/2 cup feta cheese, crumbled
  • FOR DRESSING
  • 2 tablespoons olive oil, extra virgin
  • 2 tablespoons white wine vinegar
  • 1 tablespoon lemon juice, fresh
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard

How To Make heirloom tomato salad

  • Step 1
    For Dressing: Whisk all ingredients together until well blended, set aside.
  • Step 2
    For Salad: If using large tomatoes, remove seeds and cut tomatoes into small chunks. If using small tomatoes, slice in half. Add to medium bowl.
  • Step 3
    Add onion, cucumber, basil, feta and dressing. Toss gently to combine.
  • Step 4
    Refrigerate until ready to serve.
