I love a great ... easy ... salad that's healthy. And I love Ina Garten on the Food Network. This recipe is the perfect combination of the two .

Ingredients For guacamole salad

1 ptgrape tomatoes, halved

1yellow pepper, seeded and 1/2" diced

1 can(15oz) black beens, rinsed and drained

1/2 cred onion, diced

1 Tbspjalapeno pepper, seeded (2 peppers for a real kick)

`1/2 tspfreshly grated lime zest
-
1/4 clime juice (fresh) (2 limes)

1/4 cgood olive oil
-
1 tspkosher salt
-
1/2 tspblack pepper
-
1/2 tspminced garlic
-
1/4 tspground cayenne pepper

2 lgavocados (seeded, peeled, 1/2" dice
How To Make guacamole salad

1Place the tomatoes, yellow pepper, black beans, red onion, jalapeno pepper, and lime zest in a large bowl.

2Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper. Pour over vegetables. Toss well.

3Just before serving, fold the avodados into the salad. Serves well at room temperature
