I love a great ... easy ... salad that's healthy. And I love Ina Garten on the Food Network. This recipe is the perfect combination of the two .

Ingredients For guacamole salad

  • 1 pt
    grape tomatoes, halved
  • 1
    yellow pepper, seeded and 1/2" diced
  • 1 can
    (15oz) black beens, rinsed and drained
  • 1/2 c
    red onion, diced
  • 1 Tbsp
    jalapeno pepper, seeded (2 peppers for a real kick)
  • `1/2 tsp
    freshly grated lime zest
  • 1/4 c
    lime juice (fresh) (2 limes)
  • 1/4 c
    good olive oil
  • 1 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    minced garlic
  • 1/4 tsp
    ground cayenne pepper
  • 2 lg
    avocados (seeded, peeled, 1/2" dice

How To Make guacamole salad

  • 1
    Place the tomatoes, yellow pepper, black beans, red onion, jalapeno pepper, and lime zest in a large bowl.

    Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper. Pour over vegetables. Toss well.

    Just before serving, fold the avodados into the salad. Serves well at room temperature
