GUACAMOLE SALAD

I love a great ... easy ... salad that's healthy. And I love Ina Garten on the Food Network. This recipe is the perfect combination of the two .
Ingredients

1 ptgrape tomatoes, halved
-
1yellow pepper, seeded and 1/2" diced
-
1 can(s)(15oz) black beens, rinsed and drained

1/2 cred onion, diced
-
1 Tbspjalapeno pepper, seeded (2 peppers for a real kick)
-
`1/2 tspfreshly grated lime zest
-
1/4 clime juice (fresh) (2 limes)
-
1/4 cgood olive oil
-
1 tspkosher salt
-
1/2 tspblack pepper
-
1/2 tspminced garlic
-
1/4 tspground cayenne pepper
-
2 largeavocados (seeded, peeled, 1/2" dice
How to Make GUACAMOLE SALAD
- Place the tomatoes, yellow pepper, black beans, red onion, jalapeno pepper, and lime zest in a large bowl.
- Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper.
Pour over vegetables. Toss well. - Just before serving, fold the avodados into the salad.
Serves well at room temperature
