grilled octopus salad w/lemon garlic vinaigrette

If you have never tried octopus, this recipe is the one to start with. It's so good and quite easy to make. Don't be afraid to step outside your comfort zone and take a walk on the wild side! Cooking with Love & Passion sw :)

Ingredients

  • 2 pounds whole octopus, cleaned
  • 1/2 - onion
  • 2 - lime kaffir leaves
  • 2 - bay leaves
  • 4 - garlic cloves, smashed
  • 2 - jalapeño peppers, cut
  • 1 - lemon, cut in half
  • - sea salt
  • 1 1/2 tablespoons olive oil, extra virgin
  • LEMON GARLIC VINAIGRETTE
  • 1/3 cup - olive oil, extra virgin
  • - juice & zest of 1 lemon
  • 1 - garlic clove, grated
  • 1 teaspoon maple syrup
  • - sea salt to taste
  • SALAD INGREDIENTS
  • 1 - jalapeño pepper, thinly sliced
  • 1 - roma tomato, chopped
  • 1/2 small red onion, thinly sliced
  • 1 small cucumber, chopped
  • 2 tablespoons parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)

How To Make grilled octopus salad w/lemon garlic vinaigrette

  • Step 1
    Fill a large stock pot with water" 2/3's of the way up pot", onion, lime kaffir leaves, bay leaves, garlic cloves, jalapeño peppers, lemon and sea salt . Bring to a boil. Lower octopus in pot tentacles first. Reduce heat and simmer for 90 minutes or until tender. Set aside and cool.
  • Step 2
    Heat grill to medium-high heat. Brush octopus with olive oil. Grill octopus 2-3 minutes on each side.
  • Step 3
    In a small bowl, whisk together vinaigrette ingredients.
  • Step 4
    Place octopus on platter and assemble salad. Enjoy
