greek avocado & feta salad

I wanted to break out from our usual green leafy salads, so, I made this salad with what I had on hand and it was a winner. My neighbors always request this salad when I invite them over for dinner. You can increase or decrease the amounts of the ingredients to suite your taste.

Ingredients

  • 2 cups avocados (about 2 medium), peeled and chopped into bite-size chunks
  • 2/3 cup grape tomatoes, halved
  • 2 medium green onions, finely chopped, white & green parts
  • 1/3 cup greek kalamata olives, pitted and rough-chopped
  • 1/4 teaspoon salt
  • 1 teaspoon fresh squeezed lemon or lime juice
  • 1/2 tablespoon greek or italian salad dressing
  • 1 1/4 cups feta cheese crumbles
  • 1 tablespoon italian flat-leaf parsley, chopped for garnish

How To Make greek avocado & feta salad

  • Step 1
    In a large salad bowl, add the chopped avocados, grape tomato halves, chopped green onions, and chopped Greek olives.
  • Step 2
    Sprinkle the salt over the vegetables. Add the fresh squeezed lemon or lime juice followed by the Greek or Italian salad dressing. Toss gently to coat all the veggies.
  • Step 3
    Layer the Feta Crumbles on top of the salad and garnish with the chopped parsley. Refrigerate until ready to serve.
