frito-lay corn salad
There are many versions of this recipe. It's so easy to make. My brother Tom in Paris, Texas made this the first time I had it and I couldn't stop eating it. I could sooooo see this either on top of a bed of lettuce or even in a softened, small flour tortilla with salsa. Heck! You could even add avocado slices!

Ingredients
- 2 cans fiesta corn (mexican corn)
- 1/2 cup red onion, diced
- 1/2 cup celery, diced
- 1/2 cup mayonnaise
- 3 tablespoons ranch dressing
- 1 1/2 cups cheddar cheese, grated
- 1 bag chili cheese frito chips
How To Make frito-lay corn salad

Step 1In a large bowl, mix all except Chile Cheese Fritos. Allow to sit in the fridge for an hour or so to marry the flavors.

Step 2When ready to serve, lightly crush the bag of Fritos. Add to the corn mix and serve.
