frito-lay corn salad

There are many versions of this recipe. It's so easy to make. My brother Tom in Paris, Texas made this the first time I had it and I couldn't stop eating it. I could sooooo see this either on top of a bed of lettuce or even in a softened, small flour tortilla with salsa. Heck! You could even add avocado slices!

Ingredients

  • 2 cans fiesta corn (mexican corn)
  • 1/2 cup red onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup mayonnaise
  • 3 tablespoons ranch dressing
  • 1 1/2 cups cheddar cheese, grated
  • 1 bag chili cheese frito chips

How To Make frito-lay corn salad

  • Step 1
    In a large bowl, mix all except Chile Cheese Fritos. Allow to sit in the fridge for an hour or so to marry the flavors.
  • Step 2
    When ready to serve, lightly crush the bag of Fritos. Add to the corn mix and serve.
