english cucumber salad
I love the English Cucumbers for their thin skin, and the small seeds that they have in them when compared to the regular ones. Either type will work well in this recipe. I decided to make this healthy salad for our dinner, and it is so simple and easy to make using the Extra Virgin Olive Oil with the Apple Cider Vinegar, and no calorie sweetener packets. I even threw in some Chia Seeds to add a bit of fiber to the salad. We love it, and so did my neighbor. I hope you like it too.

Ingredients
- 4 - green onions, chopped
- 1 medium red onion chopped
- 1 large tomato, cubed
- 3-4 medium mini sweet peppers, chopped
- 2 medium english cucumbers, sliced thinly
- 1 tablespoon garlic juice, or 2 cloves minced
- 1/2 cup apple cider vinegar
- 1 cup extra virgin olive oil
- 2 tablespoons chia seeds
- 4 packages zero calorie sweetener

Step 3Prep all of the vegetables into desired sizes.

Step 4Add the olive oil and apple cider vinegar to a large bowl, then whisk together till blended. Then add in the Chia seeds and no calorie sweetener and whisk to combine.

Step 5Now pour the salad dressing mixture over the veggies and stir to coat. Cover and allow to marinate at least an hour before you are ready to serve if time permits. Then serve and enjoy.
