My family has had this salad at all our summer functions since I was little. The avocado mixing with the mayo makes a creamy dressing that is cool and refreshing for those long, hot summer days and you're in and out of the kitchen in no time. If it's a potluck, I always volunteer to bring the salad and there's never any left! You can easily double the ingredients for larger parties. Don't let the name fool you, you can enjoy it in the winter time too.

Ingredients For easiest salad ever

  • VEGETABLE SUMMER SALAD
  • 2 or 3 md
    tomatoes-diced
  • 1-14 oz
    can green beans (can sub 1 cup frozen peas
  • 1 lg
    bellpepper diced-optional
  • 1
    cucumber-diced
  • 2 md
    haas avocados-diced
  • 1/2 md
    head cabbage-cubed
  • 3/4 c
    mayonaise-any kind
  • 1 1/8 tsp
    garlic-granulated or powder
  • salt and pepper to taste

How To Make easiest salad ever

    Prepare all ingredients and combine, adding mayo lastly. Mix and store in refrigerator until eaten. Keeps well into next day if you have any leftovers.
