My family has had this salad at all our summer functions since I was little. The avocado mixing with the mayo makes a creamy dressing that is cool and refreshing for those long, hot summer days and you're in and out of the kitchen in no time. If it's a potluck, I always volunteer to bring the salad and there's never any left! You can easily double the ingredients for larger parties.
Don't let the name fool you, you can enjoy it in the winter time too.
