cucumber feta salad

This came from the Taste of home magazine, and I make this frequently. It was from Connie Lasko from Mistatim, Saskatchewan.

Ingredients

  • 2 medium cucumbers
  • 1/2 teaspoon salt
  • 1/4 cup scallions, chopped, green parts too
  • 4 ounces crumbled feta cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/8 to 1/4 teaspoon coarsely ground black pepper

How To Make cucumber feta salad

  • Step 1
    Peel cucumbers, and cut in half lengthwise.
  • Step 2
    Using a spoon, scoop seeds and discard.
  • Step 3
    Cut cukes into 1/2 inch ipeces, place in a bowl and sprinkle with the salt.
  • Step 4
    Stir in onions.
  • Step 5
    In a bowl combine the cheeese, lemon juice, oil and pepper, add to cucumber mixture, and stir gently.
  • Step 6
    Cover and chill til serving.
