cucumber feta salad
This came from the Taste of home magazine, and I make this frequently. It was from Connie Lasko from Mistatim, Saskatchewan.

Ingredients
- 2 medium cucumbers
- 1/2 teaspoon salt
- 1/4 cup scallions, chopped, green parts too
- 4 ounces crumbled feta cheese
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/8 to 1/4 teaspoon coarsely ground black pepper
How To Make cucumber feta salad

Step 1Peel cucumbers, and cut in half lengthwise.

Step 2Using a spoon, scoop seeds and discard.

Step 3Cut cukes into 1/2 inch ipeces, place in a bowl and sprinkle with the salt.

Step 4Stir in onions.

Step 5In a bowl combine the cheeese, lemon juice, oil and pepper, add to cucumber mixture, and stir gently.

Step 6Cover and chill til serving.
