Crunchy and sweet Cauliflower Salad

joanne ricci

I am always looking for low calorie dishes that are quick and easy. They also have to pass the husband test. This one did. Great to make ahead in a big bowl to have it all week. Add any other of your favorite ingredients, like cucumbers, hard boiled eggs, and nuts. This is one that you can be creative with. It is all about the sweet with the crunchy!

Add any other veggies you would like at this point. Be creative!
(Sometimes I add red, yellow peppers, cucumbers or even peas. What ever you have on hand.
