cranberry coleslaw
The cabbage and the cranberries are a great boost of vitamin c, and the berries give the slaw a great tart sweetness. I can normally take or leave coleslaw, but this one I eat by the bowl!

- 1/2 large cabbage head
- 1/2 cup nonfat mayonnaise
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 2 tablespoons apple cider vinegar
- 1/3 cup cranberries, dried

Step 1Slice cabbage into shreds

Step 2Make dressing by combining mayo, honey and vinegar.

Step 3Combine cabbage and cranberries in a large bowl, coat well with dressing.
