I have tried many similiar recipies this one is just my favorite. It's also good with grilled chicken tossed in. To make completely vegetarian use oriental flavor noodles. I often double the topping. Best served right away, if I am going to make ahead I reserve teh crunch topping and add it in just before serving. Thanks for viewing.

How to Make Chinese Napa Slaw

  1. Crush noodles, place them in a medium skillet and brown in butter over medium heat.
  2. Add almonds and sesame seeds. Stir often to prevent burning.
  3. Add seasoning mix from noodles and cool.
  4. In a large bowl place the chopped napa, bok choy and 6 of the onions.
  5. Add noodle mixture.
  6. Prepare the dressing by whisking together the vegetable oil, rice vinegar, soy sauce, sesame oil and sugar. Pour over salad, toss. Top with the remaining 2 sliced green onions. Enjoy!
