chinese napa slaw

I have tried many similiar recipies this one is just my favorite. It's also good with grilled chicken tossed in. To make completely vegetarian use oriental flavor noodles. I often double the topping. Best served right away, if I am going to make ahead I reserve teh crunch topping and add it in just before serving. Thanks for viewing.

Ingredients
- CRUNCHY TOPPING
- 1 package ramen noodle pkg (any flavor - i usually use chicken )
- 1/4 cup butter
- 1/2 cup toasted sesame seeds
- 1/2 cup almonds (sliced or slivered)
- SALAD
- 1/2 medium napa cabbage, chopped
- 1/2 medium bok choy chopped
- 8 - green onions sliced
- DRESSING
- 1/4 cup oil
- 1/4 cup rice wine vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1/8 cup white sugar
How To Make chinese napa slaw

Step 1Crush noodles, place them in a medium skillet and brown in butter over medium heat.

Step 2Add almonds and sesame seeds. Stir often to prevent burning.

Step 3Add seasoning mix from noodles and cool.

Step 4In a large bowl place the chopped napa, bok choy and 6 of the onions.

Step 5Add noodle mixture.

Step 6Prepare the dressing by whisking together the vegetable oil, rice vinegar, soy sauce, sesame oil and sugar. Pour over salad, toss. Top with the remaining 2 sliced green onions. Enjoy!
