BonniE !

This salad is delicious and very easy on the waistline. It would be great for barbecues and potlucks. You can make it in five minutes! We buy the tri-blend beans by the case from Kroger because they are so good and good for you. I always have two cans chilling in the fridge to make this salad. Enjoy my humble recipe!

5 Min

  • ·
2 15 ounce cans of tri-bean blend beans, simple truth brand
  • ·
1 large white onion diced fine
  • ·
    3 tablespoons malt vinegar
  • ·
    2 tablespoons grape seed oil
  • ·
    salt and pepper to taste
  • ·
options: anaheim, red bell, or banana peppers, ½ cup diced fine

  1. Cook's Note: Make the salad as written the first time, then adjust to suit your own taste. The Malt Vinegar and Grape seed oil combination makes a great dressing.
  2. Drain the beans very well. Put them in a container that has a tight lid.
  3. Then add the diced onion.
  4. Add the Malt Vinegar and the Grape seed oil.
  5. Salt and pepper to taste.
  6. Gently mix the ingredients, and put the lid on the container and chill for at least 4 hours. You can eat this salad right away, if you are short on time, but it is better to let the ingredients get acquainted with each other for a few hours. Enjoy!
  7. Cook's Note: A word about the Tri-Bean Blend. Ingredients: It is a blend of certified organic kidney beans, organic pinto beans, and organic black beans from Simple Truth, (Kroger) and seasoned with sea salt. There is no BPA in the lining of the can.
