The wife of my former boss gave me this recipe years ago. I broke it out earlier this summer for the first time in a long time. I've made it three times this summer. It can be a main dish salad if you cut up and add cooked chicken to it.

Ingredients

  • FOR THE SALAD:
  • 1 large head of green cabbage
  • 1 cup finely chopped celery
  • 8 - chopped green onions
  • 8 tablespoons toasted, slivered almonds
  • 2 packages uncooked ramen noodles broken up
  • FOR THE DRESSING:
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 packages ramen noodle seasoning packets
  • 2 teaspoons toasted sesame oil
  • 1 cup salad oil (aka vegetable oil)
  • 6 tablespoons rice vinegar

How To Make asian cabbage salad

  • Step 1
    Shred cabbage, chop celery and onion and mix together.
  • Step 2
    Toast almonds under broiler or in a frying pan on the stove top and combine with broken up ramen noodles.
  • Step 3
    Mix dressing ingredients together.
  • Step 4
    Just before serving mix vegetables, almonds, noodles and dressing all together and serve immediately.
