The wife of my former boss gave me this recipe years ago. I broke it out earlier this summer for the first time in a long time. I've made it three times this summer. It can be a main dish salad if you cut up and add cooked chicken to it.

Ingredients

  • FOR THE SALAD:

  • 1 large
    head of green cabbage
  • 1 c
    finely chopped celery
  • 8
    chopped green onions
  • 8 Tbsp
    toasted, slivered almonds
  • 2 pkg
    uncooked ramen noodles broken up
  • FOR THE DRESSING:

  • 4 Tbsp
    sugar
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 2 pkg
    ramen noodle seasoning packets
  • 2 tsp
    toasted sesame oil
  • 1 c
    salad oil (aka vegetable oil)
  • 6 Tbsp
    rice vinegar

How to Make Asian Cabbage Salad

Step-by-Step

  1. Shred cabbage, chop celery and onion and mix together.
  2. Toast almonds under broiler or in a frying pan on the stove top and combine with broken up ramen noodles.
  3. Mix dressing ingredients together.
  4. Just before serving mix vegetables, almonds, noodles and dressing all together and serve immediately.
