I made this salad over the holidays. My autistic son loved it. He had four servings.

  • 2 c
    romaine lettuce leaves, torn
  • 2 c
    spinach, fresh, torn
  • 2 c
    fresh kale, chopped
  • 1 c
    grape tomatoes, cut in half
  • 1 large
  • 1
  • 1/4 c
    chopped pecans

How to Make John's Favorite Salad


  1. Tear lettuce, spinach and kale into bite sized pieces.
  2. Peel carrot and chop into small pieces.
  3. Cut tomatoes in half.
  4. Peel cucumber and slice. The cut slices into fourths.
  5. Place all ingredients into a large bowl and toss to mix.
  6. Serve with your favorite dressing. John likes raspberry vinaigrette.
