I threw this together, with my ingredients on hand.To take to a cookout at my friends home. Everyone loved it, so did I! Out of 17 people, 8 women asked for the recipe. The other 8 were the husbands!.....I am sure you will like it also. I love taking cold salads with NO MAYO to gatherings, and the colors look so pretty! There was no left overs. Ingredients

  • 4 lg
    fresh ripe tomatoes.....not squishy ripe!
  • 1/4 c
    salad oil.........i use canola oil
  • 1/4 c
    cider.... or red wine vinegar
  • 1 Tbsp
    fresh parsley... cleaned and chopped
  • 1 Tbsp
    dill ......fresh or dried
  • 3 md
    green onions.....cleaned & sliced
  • 1 sm
    head lettuce..... to chop up later
  • 2 md
    cucumbers ....washed scored and sliced
  • 6 sm
    fresh sweet mini peppers. .tri colored, from the bag.

How To Make

    Wash and slice the tomatoes, then cut in 3rds or halves Put in a bowl. Combine the oil, vinegar, parsley, dill and chopped up green onions. Gently toss with the tomatoes. Cover, and put in the refrigerator for 1 to 2 hours. To meld the flavors.

    Clean and score the cucumbers. Set aside.

    Shred the lettuce, as you would cabbage. One small head or 1/2 a large head. I use a plastic knife.. then your lettuce will not turn brown at the cut edges. Set aside.

    Clean and seed 6 small , sweet mini peppers and slice thin. Put the lettuce, cucumbers and sweet min peppers, in a large bowl. ***When ready to serve, Add the cold tomatoes mixture, to the above mix. Toss lightly,gently until well blended. Salt and pepper , if desired. Now enjoy!
