A light refreshing lunch.
I always start out with a guacamole salad when I go out for mexican, its my favorite. I decided to make my own semi-homemade version for a nice light lunch.

large tomatoes

ripe avacados
1 c
shredded lettuce
1.2 oz
package guacamole mix

How to Make Avacado Salad Stuffed Tomato Cups

Step-by-Step

  • 1Hollow out two tomatoes.
    Cut and remove pit from avacados, scoop out inside into bowl.
  • 2Mash avacados with packet of guacamole mix, squeeze juice of half lime, mix. Best if refrigerate for 30min.
  • 3Layer each tomato cup with shredded lettuce, then guacamole, sprinkle few chopped tomatoes. Serve with dollop of sour cream and lime wedge.
