red white & blueberry salad

A wonderful low carb festive salad to bring to our summer cookouts! Can be served with dressing of choice, This is my recipe. Pic from pillsberry.com

Ingredients

  • 6 cups chopped romaine
  • 2 1/2 cups chopped watermelon
  • cup blueberries
  • 1/2 - thinly sliced jicama
  • 1 - 6oz lemon greek yogurt
  • 1/4 cup white balsamic vinegar
  • 2 teaspoons honey or agave

How To Make red white & blueberry salad

  • Step 1
    Combine blueberries and watermelon in bowl, pour 1/4 cup balsamic vinegar pour over fruit and toss gently and let marinate for 15min.
  • Step 2
    Mix yogurt, agave, and pinch of salt in bowl set aside.
  • Step 3
    Take thinly sliced jicama and cut into stars.
  • Step 4
    Put chopped romaine in large bowl, Add marinated fruit and dressing and toss, top with your jicama stars. What a pretty and tastey salad!
