pineapple rice creamy salad
A sweet fluffy Jell-O salad. The rice and pineapple add great texture. You can change out the Jell-O to make different color for every holiday- this one is good for St. Patrick's Day or Christmas too. This recipe works great frozen too. Line a loaf pan with foil overhanging on the ends so you can lift out easily to slice. Spray foil lightly and pour mixture into pan and freeze until set, but not solid. Recipe from Food.com.

- 3 ounces package lime jell-o
- 1 cup boiling water
- 20 ounces can crushed pineapple, drain, reserve juice
- 1/2 cup of the reserved pineapple juice
- 1 1/2 cups cooked fluffy rice, cold
- 14 ounces can sweetened condensed milk, chilled (eagle brand)

Step 1Dissolve Jell-O in boiling water; add pineapple juice and chill for 1 hour to cool. Also chill the sweetened condensed milk for 1 hour. Beat condensed milk(NOT evaporated milk) on high for about 3 minutes, till thick. Beat Jell-O about 3 minutes with mixer on high until mixture is light and fluffy, then add the whipped milk. Fold in rice and well drained pineapple. Chill for about 1 hour.
