Ingredients

  • 2 - limes, juiced
  • 2 tablespoons olive oil
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons shallot, finely chopped
  • 1 teaspoon hot sauce (such as tabasco)
  • 1 teaspoon honey
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon kosher salt
  • 1 bunch watercress
  • 2 cups pineapple, cubed
  • 1 small jicama, peeled and cut into matchsticks
  • 1 - jalapeno pepper, thinly sliced (remove seeds for less heat)

How To Make pineapple-jicama salad

  • Step 1
    Whisk together lime juice, olive oil, cilantro, shallot, hot sauce, honey, ground cumin and salt.
  • Step 2
    Combine watercress, pineapple, jicama and jalapeno and then toss with dressing. Season to taste with salt.
