I went to a cooking demo at my library to see how they do it - I am doing a class in September. This recipe was presented by the RD (registered dietitian) from the local supermarket. I made it that night with a few modifications to bring to a pool party today. It was a huge hit, something different!

    peaches, skin off or on, your choice, sliced 1/2-inch thick
  • 1/4 c
    red onion, slices very thinly
  • 1/4 c
    fresh basil leaves, torn
  • ·
    juice of 1/2 lemon
  • 1/2 tsp
    coarse sea salt
  • ·
    freshly ground black pepper
  • 1 Tbsp
    extra virgin olive oil
  • 2 tsp

How to Make Peach, Basil and Red Onion Salad


  1. Toss the peaches with the red onion, basil, lemon juice, honey, salt and pepper. Drizzle with olive oil.
  2. Note: Make this a meal by adding grilled chicken breast.
