peach, basil and red onion salad
I went to a cooking demo at my library to see how they do it - I am doing a class in September. This recipe was presented by the RD (registered dietitian) from the local supermarket. I made it that night with a few modifications to bring to a pool party today. It was a huge hit, something different!

Ingredients
- 3 - peaches, skin off or on, your choice, sliced 1/2-inch thick
- 1/4 cup red onion, slices very thinly
- 1/4 cup fresh basil leaves, torn
- - juice of 1/2 lemon
- 1/2 teaspoon coarse sea salt
- - freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 2 teaspoons honey
How To Make peach, basil and red onion salad

Step 1Toss the peaches with the red onion, basil, lemon juice, honey, salt and pepper. Drizzle with olive oil.

Step 2Note: Make this a meal by adding grilled chicken breast.
