    watermelon, seedless
  • 1
    cucumber halved lengthwise and thinly sliced
  • 2
    champagne mango peeled and cubed (2 1/2 cups)
  • 4
    green onions chopped
  • 1/3 c
    mint, fresh
  • 1/3 c
    pecans, in pieces, chopped
  • 2 Tbsp
    extra virgin olive oil
  • 2 Tbsp
    white balsamic vinegar
  • 1/3 tsp
    sea salt

How to Make Minty Watermelon, Cucumber, and Mango Salad


  1. In a large bowl, gently combine the watermelon, cucumber, mango, onions, mint, and nuts. In a small bowl, whisk oil, vinegar, and salt. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.
