Ingredients

  • 8 cups watermelon, seedless
  • 1 - cucumber halved lengthwise and thinly sliced
  • 2 - champagne mango peeled and cubed (2 1/2 cups)
  • 4 - green onions chopped
  • 1/3 cup mint, fresh
  • 1/3 cup pecans, in pieces, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1/3 teaspoon sea salt

How To Make minty watermelon, cucumber, and mango salad

  • Step 1
    In a large bowl, gently combine the watermelon, cucumber, mango, onions, mint, and nuts. In a small bowl, whisk oil, vinegar, and salt. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.
