- 8 cups watermelon, seedless
- 1 - cucumber halved lengthwise and thinly sliced
- 2 - champagne mango peeled and cubed (2 1/2 cups)
- 4 - green onions chopped
- 1/3 cup mint, fresh
- 1/3 cup pecans, in pieces, chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white balsamic vinegar
- 1/3 teaspoon sea salt

Step 1In a large bowl, gently combine the watermelon, cucumber, mango, onions, mint, and nuts. In a small bowl, whisk oil, vinegar, and salt. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.
