This salad is good for a brunch, special lunch, or dinner. It is easy to prepare, flavorful with a hint of mint, and serves up beautiful in stemware.

Ingredients

  • 1/2 - cantaloupe, cut in bit size pieces
  • 1/2 - watermelon, small and cut in bit size pieces
  • 1 - cucumber, thinly sliced and peeled
  • 8 ounces mint jelly, melted
  • 2 tablespoons honey
  • 3 tablespoons lime juice

How To Make melon and cucumber salad

  • Step 1
    In a microwave-safe bowl, microwave the jelly for one minute. Whisk in the honey and lime juice until well blended.
  • Step 2
    Combine together the melons and cucumber in a large bowl. Pour the dressing over the fruit and cucumber. Chill before serving. Serve in stemware with mint leaves if you prefer.
