This is a delicious, refreshing fruit salad that I made for a family reunion. I am very happy to report that everyone seemed to like it. I hope that you find it a wonderful treat to your tastebuds!

Ingredients

pineapple chunks, fresh
1 qt
strawberries, quartered
1 c
blueberries, fresh

kiwi fruit, peeled and cubed

nectarines, cubed
1 Tbsp
lime juice ~ 1-2 fresh limes
2 tsp
honey
1/8 tsp
cinnamon, ground

DRESSING

2 Tbsp
mayonnaise, light
2 Tbsp
lemon yogurt
1 Tbsp
honey
1 Tbsp
lemon juice, fresh
1 Tbsp
orange juice
1 Tbsp
lemon zest, grated

How to Make Lemon Dressed Fruit Salad

Step-by-Step

  • 1Cut pineapple into chunks.
    Wash and quarter Strawberries.
    Peel Kiwi and cut into small cubes.
    Cut nectarine into small pieces.
  • 2In large bowl combine pineapple, strawberries, blueberries, kiwi and nectarine.
  • 3In small bowl, mix lime juice, honey and cinnamon until everything is well mixed. Pour over fruit, cover it and put in refrigerator until ready to use.
  • 4Making the Dressing:
    In small container mix mayonnaise and yogurt together.
  • 5Zest lemon prior to cutting it for lemon juice. When finished zesting, cut lemon in half and juice it into a small bowl.
  • 6Add in honey, fresh lemon juice and orange juice to the yogurt mayo mixture. Blend until there are no lumps. Add zest from lemon to dressing. Pour dressing on fruit prior to serving.
