fresh pear salad w/pear & blu cheese dressing

I pinched this recipe from a magazine at a Dr's office a couple months ago. A friend and I went up to Green Bluff, WA (by Mt.Spokane) 1/2 hour drive from Spokane, WA. we loaded the car with fresh produce from many fruit and vegetable farms up there. Plums, apples, peaches, pears, carrots, potatoes, various squashes,tomatoes, beets, garlic, and the delicious Walla Walla onions! (see all pictures) Here is the "pinched" recipe using the pears. Ingredients

  • 2 large fresh pears
  • - a few lettuce leaves
  • 1/4 teaspoon dried tarragon
  • 1-1/2 tablespoon cider vinegar
  • 1 tablespoon fresh lemon juice
  • 3 ounces crumbled blue cheese....or cheese of your choice
  • 1/3 cup sugar

How To Make fresh pear salad w/pear & blu cheese dressing

  • Step 1
    Peel pit, and chop up one pear. In 1/3 cup of water, in a saucepan add tarragon, sugar and chopped pear. Simmer over medium heat till pear os soft, about 4 minutes. Watch so that the water does not evaporate. You should have about 7/8 of a cup of liquid and pears.
  • Step 2
    Remove from heat . Put in a container, and keep cool. Serve over this delicious salad ,with a sprinkling of the Blu Cheese.
