This contest-winning Taste of Home Test Kitchen approved recipe w/its red & green-colored ingredients is perfect for Christmas meals. Dried cranberries & blue cheese make a great combo w/salad greens, apples, walnuts & a simple cranberry vinaigrette. It's also a much healthier alternative to the more typical high-calorie creamed salads, esp when you know you'll be eating a heavy meal w/a dessert finale. ENJOY!

Ingredients

  • 8 cups mixed salad greens
  • 2 - apples, medium red apples
  • 1/2 cup blue cheese, crumbled
  • 40 grams dried cranberries (1/3 cup)
  • 1/3 cup walnuts, toasted & coarsely chopped
  • 1/4 cup green onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons cranberry juice concentrate, bottled or frozen & thawed
  • 1 tablespoon white wine vinegar
  • - salt & pepper, dashes of

How To Make contest-winning holiday tossed salad

  • Step 1
    In a lrg salad bowl, combine the salad greens, apples, blue cheese, cranberries, walnuts & onions.
  • Step 2
    In a sml bowl, whisk the remaining ingredients. Pour over salad & toss gently to coat. Serve immediately.
