My family always enjoys a broccoli salad, but when I underwent chemo and radiation a few years back I started adding the fruit to it to help keep me going between treatments. This salad is refreshing and filling and perfect for a hot Summer day.

Ingredients

  • 3
    strips of bacon, cooked and crumbled
  • 1 medium
    head broccoli, florets removed
  • 1 large
    sweet apple, chopped
  • 1/2 c
    chopped sweet onion
  • 11 oz
    mandarin oranges, drained
  • 1/2 c
    raisins
  • 1/3 c
    shredded cheddar cheese
  • 1/2 c
    mayo
  • 1 Tbsp
    sugar
  • 1/2 Tbsp
    rice vinegar

How to Make Broccoli and Fruit Salad

Step-by-Step

  1. In a bowl combine the first 7 ingredients. Whisk together the mayo, sugar and vinegar and pour over the broccoli mixture. Toss to coat well. Cover and place in the fridge for 1 hour before serving.
