broccoli and fruit salad
My family always enjoys a broccoli salad, but when I underwent chemo and radiation a few years back I started adding the fruit to it to help keep me going between treatments. This salad is refreshing and filling and perfect for a hot Summer day.

Ingredients
- 3 - strips of bacon, cooked and crumbled
- 1 medium head broccoli, florets removed
- 1 large sweet apple, chopped
- 1/2 cup chopped sweet onion
- 11 ounces mandarin oranges, drained
- 1/2 cup raisins
- 1/3 cup shredded cheddar cheese
- 1/2 cup mayo
- 1 tablespoon sugar
- 1/2 tablespoon rice vinegar
How To Make broccoli and fruit salad

Step 1In a bowl combine the first 7 ingredients. Whisk together the mayo, sugar and vinegar and pour over the broccoli mixture. Toss to coat well. Cover and place in the fridge for 1 hour before serving.
