Ingredients

  • 2 1/2 cups grilled chicken breasts, cut into bite-sized chunks
  • 1/3-1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 1/2 stalks celery, diced
  • 1 cup seedless red grapes, halved
  • 1/2 cup walnut halves, rough chopped
  • 1 teaspoon dried thyme
  • - salt and pepper, to taste
  • 6-8 - lettuce leaves
  • 3-4 - slices of avocado per sandwich

  • Grilling chicken breasts.
    Step 1
    Grill the chicken.
  • Chopping the grilled chicken.
    Step 2
    Once the chicken has been grilled, chop.
  • All ingredients in a bowl.
    Step 3
    In a medium mixing bowl, add all ingredients (except avocado and lettuce).
  • Ingredients mixed and ready to refrigerate.
    Step 4
    Mix well. Make sure that all the chicken is coated. Let set in refrigerator until well chilled. Serve on a croissant with lettuce and avocado.
