- 2 1/2 cups grilled chicken breasts, cut into bite-sized chunks
- 1/3-1/2 cup mayonnaise
- 1/4 cup Dijon mustard
- 1 1/2 stalks celery, diced
- 1 cup seedless red grapes, halved
- 1/2 cup walnut halves, rough chopped
- 1 teaspoon dried thyme

- 6-8 - lettuce leaves
- 3-4 - slices of avocado per sandwich
