uncle wiley's chicken salad
My Uncle Wiley lives in Winter Haven, Florida. We try to visit him a couple of times a year. I love to cook, so I cook while I am there, unless we are going to some of the great restaurants in the area. But he makes the best chicken salad I have ever eaten. I brought this recipe home. My family and friends absolutely love it, so I thought that I would share it with you.
Blue Ribbon Recipe
Sweet and savory, the flavors in this chicken salad recipe are perfectly balanced. Raisins and Craisins add a chewy texture and pops of flavor, while the grapes are sweet. Chopped pecans add nuttiness and a nice crunch. A combination of mayonnaise and sour cream is a creamy, mild dressing that lets the ingredients shine. We loved this served with buttery crackers, but it would make a delicious sandwich, too. It's a fancier chicken salad to have all summer for a light meal. The recipe makes a lot, so come hungry! Ingredients
- 4 cups poached chicken, diced
- 1 cup finely chopped celery
- 1 cup chopped pecans
- 1 cup Craisins
- 1 1/2 cups green grapes, cut in fourths
- 1 cup golen raisins
- 4 ounces sour cream
- 1 cup mayonnaise
- salt and black pepper, to taste
How To Make uncle wiley's chicken salad

Step 1Poach chicken (boneless, skinless) breast for about 15 minutes.

Step 2I often cook my chicken the day before and store it in a Ziploc bag in the fridge.

Step 3When ready to make the salad, dice the chicken.

Step 4In a large mixing bowl, add the diced chicken, celery, pecans, Craisins, raisins, and grapes. Toss well.

Step 5Add the mayo and sour cream; gently mix.

Step 6Salt and pepper to taste.

Step 7I serve it with crackers, or it makes a great sandwich with lettuce and tomatoes.
