My Uncle Wiley lives in Winter Haven Florida. We try to visit him a couple of times a year. I love to cook, so I cook while I am there, unless we are going to some of the great restaurants in the area. But he makes the best chicken salad I have ever eaten. I brought this recipe home with me. My family and friends absolutely love it, so I thought that I would share it with you.
Blue Ribbon Recipe
Yum, Uncle Wiley knew what he was doing with this chicken salad recipe. It's creamy with tender, juicy chicken. Crispy grapes and crunchy pecans add a lovely texture to the chicken salad. Craisins add sweetness and tartness that put the flavor over the top. The addition of sour cream to this chicken salad adds a delicious tang that we can't get enough of. This recipe makes a lot so come hungry!

Poach chicken (boneless skinless) breast. This takes the longest amount of time. I often cook my chicken the day before and store it in a Ziploc bag in the fridge. When you are ready to make the salad you dice the chicken.
In a large bowl mix all of the ingredients; salt and pepper to taste. You may need a little more mayonnaise.
I serve it with crackers or it makes a great sandwich with lettuce and tomatoes.
