This is a healthy chicken salad I ate almost everyday for 3 months. I hoped it would help bring my cholesterol down for my annual blood test. To my surprise it brought it down 40 points, plus I lost 10 pounds!

    chunk chicken breast in water
  • ·
    strawberries, fresh, sliced
  • ·
    nectarine, chopped
  • ·
    blueberries, fresh
  • ·
    orange segments, chopped
  • ·
    apple, chopped
  • ·
    onion, chopped
  • ·
    celery, chopped
  • ·
    dried berries (cranberries, cherries, blueberries)
  • ·
    sunflower seeds
  • ·
    pecans, in pieces
  • ·
    broccoli slaw mix
  • ·
    cilantro, fresh (optional)
  • 1 Tbsp
    orange marmalade (sugar free)
  • 1 - 6 oz
    key lime, lemon or orange flavor yogurt
  • 1/2 c
    mayonnaise, fat-free

How to Make Gail's Chicken Salad


  1. Open and drain chicken. Place chicken in a large bowl and break up chunks with fingers.
  2. Mix in desired amounts of fruits, vegs/slaw, nuts and cilantro.
  3. Mix marmalade, yogurt and mayo together; mix with other ingredients. Add more mayo until salad is desired consistency. Serve on whole wheat bread.
