This is a healthy chicken salad I ate almost everyday for 3 months. I hoped it would help bring my cholesterol down for my annual blood test. To my surprise it brought it down 40 points, plus I lost 10 pounds!

Ingredients

  • 3 -12.5 oz can chunk chicken breast in water
  • - strawberries, fresh, sliced
  • - nectarine, chopped
  • - blueberries, fresh
  • - orange segments, chopped
  • - apple, chopped
  • - onion, chopped
  • - celery, chopped
  • - dried berries (cranberries, cherries, blueberries)
  • - sunflower seeds
  • - pecans, in pieces
  • - broccoli slaw mix
  • - cilantro, fresh (optional)
  • 1 tablespoon orange marmalade (sugar free)
  • 1 - 6 ounces key lime, lemon or orange flavor yogurt
  • 1/2 cup mayonnaise, fat-free

How To Make gail's chicken salad

  • Step 1
    Open and drain chicken. Place chicken in a large bowl and break up chunks with fingers.
  • Step 2
    Mix in desired amounts of fruits, vegs/slaw, nuts and cilantro.
  • Step 3
    Mix marmalade, yogurt and mayo together; mix with other ingredients. Add more mayo until salad is desired consistency. Serve on whole wheat bread.
