gail's chicken salad
This is a healthy chicken salad I ate almost everyday for 3 months. I hoped it would help bring my cholesterol down for my annual blood test. To my surprise it brought it down 40 points, plus I lost 10 pounds!

Ingredients
- 3 -12.5 oz can chunk chicken breast in water
- - strawberries, fresh, sliced
- - nectarine, chopped
- - blueberries, fresh
- - orange segments, chopped
- - apple, chopped
- - onion, chopped
- - celery, chopped
- - dried berries (cranberries, cherries, blueberries)
- - sunflower seeds
- - pecans, in pieces
- - broccoli slaw mix
- - cilantro, fresh (optional)
- 1 tablespoon orange marmalade (sugar free)
- 1 - 6 ounces key lime, lemon or orange flavor yogurt
- 1/2 cup mayonnaise, fat-free
How To Make gail's chicken salad

Step 1Open and drain chicken. Place chicken in a large bowl and break up chunks with fingers.

Step 2Mix in desired amounts of fruits, vegs/slaw, nuts and cilantro.

Step 3Mix marmalade, yogurt and mayo together; mix with other ingredients. Add more mayo until salad is desired consistency. Serve on whole wheat bread.
