curried chicken salad

Last year in my Culinary classes, I opted to come back for our open house. My teacher asked if I had any ideas for simple canape's. So I thought chicken salad, Which everyone loves. But decided to throw a middle eastern twist on it. It was so good. Crisp and refreshing. Not heavy at all. Make a lot though, this goes really quick! Enjoy! :)

Ingredients

  • 1/2 cup peanut/canola/vegetable oil
  • 1/2 tablespoon curry powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon paprika
  • dash cayenne pepper
  • dash black pepper
  • pinch salt
  • 2 - chicken breast
  • 1/4 cup greek yogurt
  • 1/2 cup hellmanns mayo
  • 2 tablespoons sour cream
  • 2 Stalks - celery (diced)
  • 15 - red grapes (halved or quartered depending on preference)
  • 1/4 - red onion, finely diced
  • TT - s & p

How To Make curried chicken salad

  • Step 1
    In a large mixing bowl, Mix together, Yogurt, Mayo, diced Celery, Diced Onion and sour cream. Mix till combined and refrigerate until chicken is done
  • Step 2
    Combine 1/2 cup of Oil with all the spices, whisk till combined
  • Step 3
    Place chicken on a Grill. And brush with the Oil and spice mixture every 2 mins, Flip and repeat until chicken is done or internal temp of 165 (Chicken may appear burnt. Not to be alarmed, this is natural)
  • Step 4
    Allow to cool, and chop in a medium dice, Mix with the dressing mix.
  • Step 5
    Half or Quarter grapes, and Fold into chicken salad until combined
  • Step 6
    Serve on toast points and garnish with paprika, and enjoy! :)
