crunchy walnut chicken salad

I make this to use in low carb wraps for a great low carb lunch or dinner. Using a Joseph's LC Pita half, 1/2 of a sliced avocado and 1/6th of the chicken salad recipe, it's 9 net carbs each serving for a sandwich. Ingredients

  • 2 cups cooked chicken, diced
  • 1/4 cup chopped green bell pepper
  • 2 stalks celery, chopped
  • 1 - green onion, green and white part, chopped
  • 1/4 cup chopped walnuts
  • 1/2 cup mayonnaise
  • 2 tablespoons dry ranch dressing mix
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

    In a large bowl, mix all ingredients together and chill at least 2 hours.
