Ingredients

  • 1 - small head of iceberg lettuce, thinly sliced
  • 1/2 - head of napa cabbage, thinly sliced
  • 1/3 cup red onion, very thinly sliced
  • 1/2 - cucumber, very thinly sliced
  • 1 - green pepper, sliced
  • 1/3 - cantalope, cubed
  • 2 - small boneless chicken breasts, grilled and cubed (optional)
  • DRESSING
  • 3/4 cup sugar
  • 1/4 cup vinegar
  • 1 cup canola oil
  • 2 tablespoons soy sauce
  • TOPPING
  • 1 package ramen noodles
  • 2 ounces sliced almonds
  • 1/2 cup butter

How To Make bok choy salad

  • Step 1
    Break up the Ramen noodles and melt butter in a large fry pan. Add the broken Ramen noodles and almonds. Stir and cook until golden brown. Set aside to cool.
  • Step 2
    Combine salad ingredients and toss with dressing.
  • Step 3
    Top with cooled Ramen noodle topping. ***Can substitute Mandarin oranges or pears for the cantalope. Green onions are also good.
