Ingredients
- 1 - small head of iceberg lettuce, thinly sliced
- 1/2 - head of napa cabbage, thinly sliced
- 1/3 cup red onion, very thinly sliced
- 1/2 - cucumber, very thinly sliced
- 1 - green pepper, sliced
- 1/3 - cantalope, cubed
- 2 - small boneless chicken breasts, grilled and cubed (optional)
- DRESSING
- 3/4 cup sugar
- 1/4 cup vinegar
- 1 cup canola oil
- 2 tablespoons soy sauce
- TOPPING
- 1 package ramen noodles
- 2 ounces sliced almonds
- 1/2 cup butter
How To Make bok choy salad

Step 1Break up the Ramen noodles and melt butter in a large fry pan. Add the broken Ramen noodles and almonds. Stir and cook until golden brown. Set aside to cool.

Step 2Combine salad ingredients and toss with dressing.

Step 3Top with cooled Ramen noodle topping. ***Can substitute Mandarin oranges or pears for the cantalope. Green onions are also good.
