I started putting this together for lunch this week and love it. It's low fat, filling and very tasty.

Ingredients

  • 3 cups romaine lettuce cut
  • 1/4 cup black olives sliced (can use any olive you would like)
  • 1 tablespoon sweet red onion chopped
  • 1/4 cup yellow cherry tomatoes halved
  • 1/4 cup red pepper diced
  • 1/8 cup athens fat free feta
  • 2 slices lean roast beef cut in 1/2 but 1" pieces
  • - kosher salt to taste
  • - fresh ground pepper to taste
  • - italian seasoning to taste
  • 1/2 tablespoon gianni's six-mushroom white truffle balsamic vinaigrette
  • 1 tablespoon light house fat free blue berry pamagrante vinegrette
