This is a family favorite and the whole house smells so good it is hard to wait to start eating! This is a favorite of anyone who has enjoyed it and I will serve it to company.

Ingredients For mediterranean meat loaf

  • 1-1/2 lb
    ground turkey
  • 2/3 c
    old fashion oatmeal
  • 2/3 c
    red onion, chopped
  • 3 clove
    garlic, minced
  • 1/2 tsp sa tsp
    sea salt
  • 1/2 tsp
    mrs. dash italian seasonings
  • 1/4 tsp
    black pepper
  • 8 oz
    canned peas and carrots, drained
  • 2 oz
    black olives, sliced, drained, divided
  • 14-1/2 oz
    fire roasted diced tomatoes seasoned with onion & herbs

How To Make mediterranean meat loaf

    Preheat oven to 325:

    Mix turkey, oatmeal, onion, garlic, salt, Mrs. Dash, pepper and eggs thoroughly.

    Gently add peas and carrots and half of the olives. Blend gently until mixed well.

    : shape into a 9X5" loaf.Place in 9x13" pan;

    Bake 30 minutes: Meanwhile, mix remaining olives with undrained tomatoes.

    Spoon tomatoes over top of loaf.

    Bake additional 30 minutes or until thermometer registers 160 degrees.

    After removing from oven, let loaf rest 10 minutes before slicing. Serve with tomato toppings.
