This is a family favorite and the whole house smells so good it is hard to wait to start eating! This is a favorite of anyone who has enjoyed it and I will serve it to company.

Ingredients

  • 1-1/2 pound ground turkey
  • 2/3 cup old fashion oatmeal
  • 2/3 cup red onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp sa teaspoon sea salt
  • 1/2 teaspoon mrs. dash italian seasonings
  • 1/4 teaspoon black pepper
  • 8 ounces canned peas and carrots, drained
  • 2 ounces black olives, sliced, drained, divided
  • 14-1/2 ounces fire roasted diced tomatoes seasoned with onion & herbs

How To Make mediterranean meat loaf

  • Step 1
    Preheat oven to 325:
  • Step 2
    Mix turkey, oatmeal, onion, garlic, salt, Mrs. Dash, pepper and eggs thoroughly.
  • Step 3
    Gently add peas and carrots and half of the olives. Blend gently until mixed well.
  • Step 4
    : shape into a 9X5" loaf.Place in 9x13" pan;
  • Step 5
    Bake 30 minutes: Meanwhile, mix remaining olives with undrained tomatoes.
  • Step 6
    Spoon tomatoes over top of loaf.
  • Step 7
    Bake additional 30 minutes or until thermometer registers 160 degrees.
  • Step 8
    After removing from oven, let loaf rest 10 minutes before slicing. Serve with tomato toppings.
