One of my children was born with a fatty oxidation disorder, leading me to change many of my old favorite standby's to meet the standards of his low fat,coconut oil-free diet. This meat loaf is one of the results of those changes and has become a family favorite.

Ingredients

2 lb
ground turkey
3 Tbsp
canned diced green chiles
1/2
onion,diced
1/2 c
saltine cracker crumbs
1
egg
ketchup
2 slice
turkey bacon
salt and pepper to taste

How to Make MCAD Friendly Meat Loaf

Step-by-Step

  • 1Crumble ground turkey into a large bowl
  • 2Add green chiles,onion,cracker crumbs, and egg, and mix thoroughly.
  • 3Shape into a loaf on a baking sheet and bake at 375 degrees for approximately 1 hour. This may take longer depending on loaf size and thickness.
  • 4Spread ketchup over top and place bacon strips on top of loaf. Return to oven until bacon is cooked.
  • 5Slice and serve.
