Baked turkey and stuffing
Ingredients

1 cwater

1 cchopped red bell pepper

1/2 cchopped onion

1/2 cuncooked long grain rice

18 oz pkg turkey stuffing mix

4 ccooked, diced left-over turkey

3 largeeggs, lighlty beaten

110-3/4 oz can low-fat condensed cream of chicken soup

1/2 clow-fat sour cream
-
1/4 cfat-free milk
How to Make Baked turkey and stuffing
- Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Set aside. In medium saucepan, bring 1 cup water to boil. Stir in red bell pepper, onion and rice. Reduce to low and simmer, covered until water is absorbed, about 20 min.
- In lg bowl, combine stuffing mix, 2 cups water. Stir in turkey, eggs and 1/2 the soup. Stir in rice mix. Spread mix in casserole dish. Bake, uncovered 40 min.
- In small saucepan, stir together remaining soup, sour cream and milk. Cook over low heat until heated through, stirring occasionally. Cut casserole into squares. Spoon sauce over squares.
