Ingredients
- 1 cup water
- 1 cup chopped red bell pepper
- 1/2 cup chopped onion
- 1/2 cup uncooked long grain rice
- 1 - 8 oz pkg turkey stuffing mix
- 2 cups water
- 4 cups cooked, diced left-over turkey
- 3 large eggs, lighlty beaten
- 1 - 10-3/4 oz can low-fat condensed cream of chicken soup
- 1/2 cup low-fat sour cream
- 1/4 cup fat-free milk
How To Make baked turkey and stuffing

Step 1Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Set aside. In medium saucepan, bring 1 cup water to boil. Stir in red bell pepper, onion and rice. Reduce to low and simmer, covered until water is absorbed, about 20 min.

Step 2In lg bowl, combine stuffing mix, 2 cups water. Stir in turkey, eggs and 1/2 the soup. Stir in rice mix. Spread mix in casserole dish. Bake, uncovered 40 min.

Step 3In small saucepan, stir together remaining soup, sour cream and milk. Cook over low heat until heated through, stirring occasionally. Cut casserole into squares. Spoon sauce over squares.
