Ingredients

  • 1 cup water
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup uncooked long grain rice
  • 1 - 8 oz pkg turkey stuffing mix
  • 2 cups water
  • 4 cups cooked, diced left-over turkey
  • 3 large eggs, lighlty beaten
  • 1 - 10-3/4 oz can low-fat condensed cream of chicken soup
  • 1/2 cup low-fat sour cream
  • 1/4 cup fat-free milk

How To Make baked turkey and stuffing

  • Step 1
    Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Set aside. In medium saucepan, bring 1 cup water to boil. Stir in red bell pepper, onion and rice. Reduce to low and simmer, covered until water is absorbed, about 20 min.
  • Step 2
    In lg bowl, combine stuffing mix, 2 cups water. Stir in turkey, eggs and 1/2 the soup. Stir in rice mix. Spread mix in casserole dish. Bake, uncovered 40 min.
  • Step 3
    In small saucepan, stir together remaining soup, sour cream and milk. Cook over low heat until heated through, stirring occasionally. Cut casserole into squares. Spoon sauce over squares.
