Chicken Rice and beans. Now that's MEXICAN!

Ingredients

  • 1-1/2 pound chicken breast-cooked and shredded
  • 1/2 medium onion-chopped
  • 1 can black beans- rinsed and drained
  • 1 can 15 oz diced tomatoes drained
  • 1 can refried beans-heated to spread
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 can 10oz diced tomatoes with green chilies
  • 1 cup long grain white rice
  • 2-1/2 cup chicken broth
  • 1-1/2 cup shredded cheese
  • corn or burrito size tortillas

How To Make chicken & rice and beans taco skillet meal

  • Step 1
    Secure a deep skillet. On Med/high heat. Add 1-2 T. olive oil. Add in chicken until no longer pink. Add chopped onions. Stir until translucent.
  • Step 2
    Add in beans, tomatoes. Sprinkle in spices and stir to combine. Add in rice. stir. Slowly add in Chicken Broth. Cover. Heat to boiling, then reduce to simmer until all liquid is absorbed. about 15. min.
  • Step 3
    Heat up refried beans and Corn or flour burrito size tortillas. Spread refried beans on tortilla. Fill tortilla with chicken rice mixture. Add cheese. Enjoy!
  • Step 4
    Or Sprinkle cheese. melt, and serve it up.
