A great one dish meal that has lots of veggies!

Ingredients

  • 1 1/2 quarts water
  • 2 pounds shrimp, medium size, unpeeled
  • 16 ounces dried spaghetti
  • 1 clove garlic, minced
  • 1 teaspoon lemon rind, grated
  • 3/4 cup olive oil
  • 2 carrots, scraped and cut into julienne strips
  • 1 zucchini, cut into julienne strips
  • 1 sweet red bell pepper, cut into julienne strips
  • 3 tablespoons fresh basil, minced
  • 2 tablespoons fresh parsleym minced
  • 2 tablespoons lemon juice
  • salt, to taste
  • pepper, to taste

How To Make shrimp and pasta

  • Step 1
    Bring the water to a boil. Add the shrimp, and cook for 3 to 5 minutes. You will cook them more later....this is just to help in the peeling and deveining!
  • Step 2
    Chill. Peel and devein the shrimp. Set aside.
  • Step 3
    Cook the spaghetti according to the package directions; drain well. Place in a large serving bowl; set aside.
  • Step 4
    Saute the garlic and lemon rind in the oil in a large skillet over medium heat for 30 seconds. Add the reserved shrimp, carrot, zucchini, and red pepper. Saute for 6 minutes or until the shrimp turn pink.
  • Step 5
    Add the basil, parsley, lemon juice, and salt and pepper to taste. Saute 2 to 3 minutes. Add the shrimp mixture to the reserved spaghetti. Toss and serve.
