Ingredients
- 1 1/2 quarts water
- 2 pounds shrimp, medium size, unpeeled
- 16 ounces dried spaghetti
- 1 clove garlic, minced
- 1 teaspoon lemon rind, grated
- 3/4 cup olive oil
- 2 carrots, scraped and cut into julienne strips
- 1 zucchini, cut into julienne strips
- 1 sweet red bell pepper, cut into julienne strips
- 3 tablespoons fresh basil, minced
- 2 tablespoons fresh parsleym minced
- 2 tablespoons lemon juice
- salt, to taste
- pepper, to taste
How To Make shrimp and pasta

Step 1Bring the water to a boil. Add the shrimp, and cook for 3 to 5 minutes. You will cook them more later....this is just to help in the peeling and deveining!

Step 2Chill. Peel and devein the shrimp. Set aside.

Step 3Cook the spaghetti according to the package directions; drain well. Place in a large serving bowl; set aside.

Step 4Saute the garlic and lemon rind in the oil in a large skillet over medium heat for 30 seconds. Add the reserved shrimp, carrot, zucchini, and red pepper. Saute for 6 minutes or until the shrimp turn pink.

Step 5Add the basil, parsley, lemon juice, and salt and pepper to taste. Saute 2 to 3 minutes. Add the shrimp mixture to the reserved spaghetti. Toss and serve.
