seafood essentials: ultimate easy/peasy salmon
Made these for the crew and they were well received. Served it with rice, and some steamed broccoli. Full Stop. These are a combination of a good sear and then finishing up in the oven. In all the years I have worked in restaurants and catering, the oven is probably best for finishing up everything from beef, pork, chicken to fish… almost foolproof. It is all about time and temperature. So, you ready… Let’s get into the kitchen.

- 12 ounces salmon, 2 pieces, boneless with skin on
- ADDITIONALS
- sweet butter, unsalted
- olive oil, extra virgin variety
- salt, kosher variety, fine grind
- black pepper, freshly ground

Step 1PREP/PREPARE

Step 2You will need a good ovenproof skillet to make this recipe. If you have cast iron, use it.

Step 3Gather your ingredients (mise en place).

Step 4Place a rack in the middle position and preheat the oven to 425f/220c.

Step 5Brush the flesh side of the salmon with olive oil, then sprinkle generously with salt and pepper.

Step 6Place the ovenproof pan over a burner at medium-high heat, and when the pan gets hot add about 2 tablespoons of olive oil, and 1 tablespoon sweet butter.

Step 7When the butter melts, give the pan a swirl to mix the oil with the butter and add the salmon, flesh-side down.

Step 8Allow to sear, without moving, until you see a crust beginning to form on the bottom where the salmon is in contact with the hot pan, about 3 – 4 minutes.

Step 9Do not turn the salmon over, but place skin-side-up in the preheated oven.

Step 10Cooking time depends on what you desire. If the salmon is about 1-inch (2.5 cm) and you liked is cooked and juicy then leave it in the oven for about 7 – 10 minutes

Step 11Remove from the oven, turn over, and check for proper doneness.
