roasted salmon and peppers
This is one of my hubby's special dishes. It is so easy, and full of flavor. Who does not love a sheet pan meal. Feel free to leave off the jalapenos. We have also added fresh green beans.

Ingredients
- 2 tablespoons olive oil
- 4 - salmon filets (3oz each)
- 2 red bell peppers, chopped
- 1 yellow bell pepper, chopped
- 1 onion sliced
- 1 sliced jalapenos, fresh, sliced , and seeded
- SAUCE
- 6 tablespoons lemon juice
- 3 tablespoons olive oil
- 2 tablespoons water
- 1 tablespoon maple syrup
- 5 cloves garlic, minced
- 1 1/2 teaspoons sea salt
- 1 1/2 teaspoons red pepper flakes
- 1 teaspoon ground cumin
- 1/2 bunch fresh parsley, chopped
- 1 lemon, sliced
How To Make roasted salmon and peppers

Step 1Preheat oven to 400 degrees. Grease a sheet pan with 2 tablespoons olive oil.

Step 2Place salmon fillets, red and yellow bell peppers, and onion on the prepared sheet pan.

Step 3Combine lemon juice, 3 tablespoons olive oil, water, maple syrup, garlic, salt, red pepper flakes, cumin, and parsley in a small bowl. Drizzle 2/3 of the sauce over the ingredients on the sheet pan.

Step 4Bake in the preheated oven until salmon is cooked through and flakes easily with a fork, 10 to 15 minutes.

Step 5Serve with lemon slices and remaining sauce.
