kato's quick and easy lobster lettuce wrap

I live in the east coast of Canada and am fortunate to get fresh seafood on a regular basis. I made two large wraps but you could easily make three or four small ones. My sil was making Lobster rolls the other day and I decided that I wanted something a little different and a little lighter for myself. So I decided to create a simple lettuce wrap; it worked great. The wrap had a lovely flavor, nice textures and it was light and refreshing. Just perfect for a light lunch.

Ingredients

  • 2 lobsters, cooked and cleaned. (use tail, claws and joint meat, cut into bite size pieces)
  • 1/4 cucumber diced (unpeeled)
  • 3 tablespoons minced sweet white onion
  • 1/2 celery minced
  • 2 1/2 tablespoons mayonnaise or miracle whip
  • 2 1/2 tablespoons sour cream, thick
  • 1/2 teaspoon white sugar (optional)
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon finely minced lemon zest
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon white pepper, fresh ground
  • 2 romaine lettuce leaves, washed and dried
  • 1 teaspoon finely chopped parsely (optional - garnish)

How To Make kato's quick and easy lobster lettuce wrap

  • Step 1
    Cut the lobster meat into bite size pieces. Put the lobster pieces in a small bowl and refrigerate until ready to use. Prepare the vegetables (cucumber, sweet onion and celery) and set aside until needed.
  • Step 2
    Next into a medium size bowl; add the mayo and sour cream, sugar, lemon juice, lemon zest, salt and pepper and mix until well blended. Once it is well blended then add the prepared vegetables and mix well.
  • Step 3
    Now gently add the lobster meat into the mixture. Cover and chill in the fridge for at least a 1/2 hour.
  • Step 4
    When ready fill the lettuce leaves with the lobster mixture and enjoy.
  • Step 5
    If desired garnish with finely chopped parsley.
