delicious coconut shrimp
This is an awesome recipe that is guaranteed to impress! It takes time to make but it is definitely worth it. Use uncooked shrimp and the freshest you can get. The time consuming part is the peeling, cleaning and butterflying of the shrimp... I love to do it myself. I guess you wouldn't have to butterfly but for presentation it is my personal choice... This would also be a great recipe to use with chicken, fish or veggies. Enjoy!

Ingredients
- 24 - jumbo tail on, devained, peeled butterflied shrimp
- 1 1/2 cups flour
- 2 tablespoons sugar
- 1/4 teaspoon kosher salt
- 1/2 cup milk
- 2 tablespoons spiced rum
- 1/2 cup pina colada mix
- 1 box panko bread crumbs
- 1/2 cup coconut flakes
How To Make delicious coconut shrimp

Step 1separate flour... put 3/4 cup in bowl #1 and 3/4 cup into bowl #2

Step 2add rum, pina colada mix, milk, salt & sugar to bowl #2 (batter)

Step 3in bowl #3 mix panko and coconut flakes

Step 41. dust shrimp in bowl #1 (flour) 2. dip shrimp into bowl #2 (batter) 3. press into bowl #3 (coconut/panko crust) set aside until all shrimp are coated.

Step 5deep fry until golden brown and drain. ENJOY!
