Party Essentials: Yummy Pastrami & Cheese Sliders

If you have some leftover pastrami, these are a snap to make, and a sure favorite for your next tailgate party, or just for plain fun. If you do not, then get some thinly-sliced pastrami from you local deli.

I am using homemade Hawaiian slider buns, and I like how the sweetness of the buns, contrasts the spiciness of the pastrami, and mustard.

So, you ready… Let’s get into the kitchen.

  • 2 Tbsp
    sweet butter, unsalted, melted
  • 1 Tbsp
    brown mustard, i prefer grey poupon
  • 1 Tbsp
    fresh clover honey
  • 1 tsp
    hot sauce, i prefer frank’s

  • 1
    slider bun
  • 1 oz
    cooked pastrami, chopped, or thinly-sliced from the deli
  • 1 slice
    provolone cheese
  • 2 tsp
    spicy brown mustard, or to taste

  • ·
    poppy seeds, for garnish

    pickle slices

    lots of beer

  2. Several things to bring this slider together, and help make it a winner.
    The Bun: I am using a homemade sweet Hawaiian roll, and I love how the sweetness of the bread contrasts with the rest of the sandwich.
    The Cheese: Swiss cheese, is a typical addition to a pastrami sandwich, but I changed that up, and I am using provolone. It has a somewhat earthy flavor, and it is not greasy, like some other cheeses, like cheddar.
    The Mustard: You do not want an ordinary yellow, or brown mustard for this slider. You want something with a bit of kick to it. If you have a good spicy brown mustard, use it. If you are in the market for a good mustard, I created this one specifically for corned beef, and pastrami.
    Condiment Essentials: Spicy "Adults Only" Mustard
    Finally, I am using leftover, homemade pastrami. If that is not an option, just get some good deli pastrami, sliced thin.
  3. Gather your ingredients (mise en place).
  4. Place a rack in the middle position, and preheat the oven to 350f (175c).
  5. Combine all of the ingredients for the topping together in a small saucepan, and keep warm.
  6. Take the slice of provolone, and cut it into quarters.
  7. Smear half the mustard on the bottom half of the slider bun, and cover with a quarter slice of the cheese.
  8. Add half the pastrami, and top with another quarter of the cheese.
  9. Add the remaining pastrami, and then the other two cheese quarters.
  10. Slather the remaining mustard on the cut side of the top half of the slider bun, and place on top. I like a bit more mustard, than the recipe calls for.
  11. Brush a generous amount of the topping to the bun, and sprinkle with some poppy seeds.
  12. Repeat for as many sliders as you are making.
  13. Place in a baking dish, covered with foil, or just use an ovenproof skillet with a lid.
  14. Bake in the preheated for about 15 – 18 minutes.
  16. Serve with some pickles, and chips, or whatever you fancy. Enjoy.
  17. Keep the faith, and keep cooking
