If you have some leftover pastrami, these are a snap to make, and a sure favorite for your next tailgate party, or just for plain fun. If you do not, then get some thinly-sliced pastrami from you local deli. I am using homemade Hawaiian slider buns, and I like how the sweetness of the buns, contrasts the spiciness of the pastrami, and mustard. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • FOR THE TOPPING
  • 2 tablespoons sweet butter, unsalted, melted
  • 1 tablespoon brown mustard, i prefer grey poupon
  • 1 tablespoon fresh clover honey
  • 1 teaspoon hot sauce, i prefer frank’s
  • INGREDIENTS PER SANDWICH
  • 1 - slider bun
  • 1 ounce cooked pastrami, chopped, or thinly-sliced from the deli
  • 1 slice provolone cheese
  • 2 teaspoons spicy brown mustard, or to taste
  • ADDITIONAL ITEMS
  • - poppy seeds, for garnish
  • - pickle slices
  • - chips
  • - lots of beer

  • Step 2
    Several things to bring this slider together, and help make it a winner. The Bun: I am using a homemade sweet Hawaiian roll, and I love how the sweetness of the bread contrasts with the rest of the sandwich. The Cheese: Swiss cheese, is a typical addition to a pastrami sandwich, but I changed that up, and I am using provolone. It has a somewhat earthy flavor, and it is not greasy, like some other cheeses, like cheddar. The Mustard: You do not want an ordinary yellow, or brown mustard for this slider. You want something with a bit of kick to it. If you have a good spicy brown mustard, use it. If that is not an option, just get some good deli pastrami, sliced thin.

    Gather your ingredients (mise en place).
  • Step 4
    Place a rack in the middle position, and preheat the oven to 350f (175c).
  • Step 5
    Combine all of the ingredients for the topping together in a small saucepan, and keep warm.

    Take the slice of provolone, and cut it into quarters.
  • Step 7
    Smear half the mustard on the bottom half of the slider bun, and cover with a quarter slice of the cheese.

    Add half the pastrami, and top with another quarter of the cheese.

    Add the remaining pastrami, and then the other two cheese quarters.
  • Step 10
    Slather the remaining mustard on the cut side of the top half of the slider bun, and place on top. I like a bit more mustard, than the recipe calls for.

    Brush a generous amount of the topping to the bun, and sprinkle with some poppy seeds.

    Repeat for as many sliders as you are making.

    Place in a baking dish, covered with foil, or just use an ovenproof skillet with a lid.

    Bake in the preheated for about 15 – 18 minutes.
