maltese egg salad sandwich
Adapted from I Love Food dot Com Malta and adjusted a bit. I usually think of egg salad as being cut-up eggs with other ingredients. Surprise! This is sliced eggs with assorted veggies!

Ingredients
- 1 - baguette
- 2-3 tablespoons mayonnaise
- 2 ounces spring mixed greens
- 1/2 - avocado
- 3 - hard boiled eggs
- - salt and pepper to taste
- - red onions and pickles, sliced thinly for garnish
How To Make maltese egg salad sandwich

Step 1Slice baguette in half, remove ends and toast lightly. Spread mayonnaise on both sides.

Step 2Top one half with mixed greens, avocado slices and egg slices. Season with salt and pepper.

Step 3Top eggs with thin slices of red onions, and pickles. Put top back on sandwiche, gently pressing together and serve.
